Crust Ingredients:

1 ¼ cups Flourish flour

¼ tsp salt

½ cup vegan butter, chilled & diced

¼ cup oat milk, cold 

Filling Ingredients:

1 butternut squash, peeled & diced

1 Tbsp berbere seasoning

2 tsp cumin

1 tsp smoked paprika

1 tsp salt and pepper

1 large sweet onion, sliced

Half a cabbage, sliced

4 cups spinach

Your choice of hummus

2 Tbsp maple syrup + 1 Tbsp oat milk (“egg wash”)


1. Combine flour, salt, and diced butter in a spacious bowl. Utilize a fork to cut the butter until the mixture takes on the appearance of coarse crumbs. Add milk and blend until a cohesive dough is formed.

2. Flatten the dough into a disk and wrap it in plastic. Allow it to chill for 2-3 hours.

3. While the dough is chilling, prepare the filling. Preheat the oven to 375°F. Spread diced butternut squash on an oiled baking tray, season with your choice of seasonings, and bake for approximately 15 minutes or until partially tender. Remove and set aside, keeping the oven on.

4. Sauté onions, steam cabbage, and microwave spinach for 30 seconds. Season cabbage and spinach with salt and pepper to taste, then set aside.

5. Retrieve the chilled dough and let it sit for 15 minutes. On a lightly floured surface, roll out the dough.

6. Evenly spread hummus over the dough, leaving a 1/2-inch border. Layer with onions, cabbage, spinach, and finish with the baked butternut squash.

7. Fold the edges of the dough over the filling. Brush with an "egg wash" and bake for 35-40 minutes or until the crust achieves a deep golden brown color. Serve warm.
