Uncle Joey's Cranberry Muffins

3 cups Flourish Flour

1 cup granulated sugar

4 tsp baking powder

1 tsp salt

2 eggs

½ cup oil

1 cup milk

1 ½ cranberries

2 tbs granulated sugar (for topping)

¼ tsp cinnamon


  1. Preheat the oven to 400 degrees. 
  2. Mix together the dry ingredients in a bowl. 
  3. In a large bowl, combine eggs, oil and milk. 
  4. Then slowing pour the dry ingredients in, stirring everything together just until moistened. 
  5. Then fold in the cranberries. 
  6. Scoop mix into greased or paper lined muffin tins. It will make about 15 muffins. 
  7. Next, mix 2 tablespoons of granulated sugar with the cinnamon and sprinkle over top. 
  8. Bake 20-25 minutes at 400 degrees.
